Dairy Free Breakfast Casserole
This dairy free breakfast casserole with sausage, sweet potato, eggs, and dairy free cheese is sure to be a hit! This breakfast casserole is so easy to make and can be made ahead of time. The recipe also is gluten free.
- 2 medium sweet potatoes
- 1 pound breakfast sausage turkey or pork
- 1 small onion diced
- 1/2 yellow pepper diced
- 1/2 red pepper diced
- 10 eggs
- 1/2 cup almond milk unflavored
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup dairy free cheese optional
Preheat oven to 350 degrees.
Cook and crumble sausage. Drain excess grease and set aside.
Cube sweet potatoes into bite sized pieces, dice peppers and onion.
Place sweet potatoes in saute pan with cooking oil, cook on medium for about 15 minutes. Add in onion and peppers and cook in the skillet until soft, about 15 minutes.
Pour sweet potato mixture evenly into a 9x13 baking dish. Top with sausage.
In a bowl, whisk together eggs, milk, paprika, and garlic powder. Pour evenly over sausage mixture.
Bake for 30 minutes, or until eggs are cooked. Add dairy free cheese the last 5 minutes of baking (optional).
